No Knead Pizza Dough Vegan

If you are sometimes in the mood for pizza but too busy or tired to knead the dough, I have some good news. It is perfectly possible to make a delicious tasting pizza with a beautifully chewy crust without any kneading whatsoever. I actually don’t mind kneading, but sometimes it’s just too much effort especially if, like me, you spend too much time in the kitchen already.

All this recipe wants from you is to mix three dry ingredients together in a bowl with some water, cover it and leave well alone for hours. I often do it just before I go to sleep knowing that I will have a ready pizza dough by dinner time. It’s so simple!

Vegan

I may be wrong, but what I think is at play here is a chemical process known as autolyse combined with some yeast action. Autolyse is a common technique used in bread baking and it’s the act of combining flour and water and letting them do their thing – during the resting time gluten forms and the dough gathers strength and elasticity. To be honest, you don’t need to concern yourself with why it works, it just does.

This is not my first venture into no knead bread baking (pizza, after all, is bread albeit flat). I used to live on this no knead Turkish bread when I moved away from a place that was right next to a Turkish bakery (now I live right next to one again and I am there every other day!) so I had high hopes for this pizza dough based on this Jim Lahe’s recipe and it absolutely delivered.

In terms of toppings, I used wild garlic pesto I had stashed in my freezer, sliced of grilled zucchini, sweet cherry tomatoes, briny capers and creamy vegan ricotta, but put whatever you like on yours including a pineapple if that’s what you are into – don’t let any rules hold you back 😉 – that’s a motto I am trying to learn to incorporate into my entire life lately.

Pizza Dough Recipe

Mix flour, salt and instant yeast in a bowl until well combined. Add water, stirring with a spoon initially then using your hands to form the dough ball.

Cover the dough (I used an old bread bag) and leave it to ferment on a kitchen counter for 18-20 hours (depending on ambient temperature). The dough should have doubled in size, risen to form a flat surface and be full of tiny bubbles and a few holes when ready.

Transfer the dough onto a well floured surface, shape into a ball (dust in flour if sticky) and divide into 4 equal portions. Shape each portion into a pizza (as big as you can manage) remembering that the crusts will rise a lot.

Top with your favourite things. I used wild garlic pesto, grilled zucchini ribbons, cherry toms cut in half, capers and small amount of my vegan ricotta.

*SEMOLINA FLOUR: it’s used to prevent raw pizza dough from sticking to the counter / pizza peel. Skip if you don’t have it.

*PIZZA STONE: pizza stone is a great thing to own if you like making pizzas, flatbreads, galettes etc. as it makes sure the bottom cooks properly. If you don’t own one, use an old-fashioned metal tray placed upside down. It won’t need as much pre-heating so pop it into the oven 20 minutes before you are ready to bake.

We love anything having to do with pizza in our house. I grew up eating this Easy Vegan Pizza Bread and now my family is in love with it too. We love pizza paninis (vegan of course!) and even pizza in soup form is also delicious. But nothing can really beat a classic slice of pizza. And today I'm going to show you how to enjoy pizza any night of the week with this Whole Wheat No-Yeast No-Rise Vegan Pizza Dough!

One thing I love about pizza is that you can create all kinds of unique, fun combinations with the toppings. We personally love classic cheese pizza with a marinara base and mozzarella cheese topping, but if you're getting bored, try out some of the other toppings/combinations listed below!

Vegan Pizza Dough

Step 1: Start by whisking together the dry ingredients including the whole wheat flour, baking powder and salt. Add in the non-dairy milk (or water) and olive oil (or applesauce). Stir until a dough forms.

Step 2: Knead the dough until all the flour as been incorporated and the dough becomes smooth. Form the dough into a ball and cover it with a dish towel to rest for about 10 minutes.

Step 3: Preheat your oven to 400°F / 205°C and line a baking sheet with parchment paper or a silicone baking mat. Roll the dough out into a 12 inch pizza, or whatever shape you desire. Poke holes all over the dough with a fork and then bake the dough plain for 8 minutes.

The Best Vegan Pizza Dough (oil Free!)

Step 5: Bake the pizza for another 15-22 minutes or until the cheese has melted and the dough is baked to your liking.

A microwave works, but it usually makes the dough soft and wet. Baking the pizza in the oven allows the crust to get a little crispy and browns the cheese. Simply place the leftover pizza on a baking sheet and place it in a 350F degree oven for a few minutes until warmed through and the cheese is bubbly!

Whole

To make pizza dough without yeast, you can simply use baking powder. Baking powder is a leavening agent which will help your pizza dough rise in the oven. No yeast needed! Although I'm not sure you can beat the texture and flavor of yeasted pizza dough.

Easiest Lazy No Knead Pizza Dough Recipe

Most pizza dough is vegan as basic dough usually requires only flour, salt, yeast and water. However, some doughs call for butter, milk and/or eggs so be sure to read the ingredients label or ask your server.

Leftover pizza stores beautifully in the fridge or freezer. Simply place it in an airtight container or zip-lock bag in the fridge for up to 5 days or freeze it for up to 3 months.

Skillet Pizza With A No Knead Crust

I tend to post creative stuff before the usual, don’t I! So today’s post is all about the basic veggie pizza in all its glory. Simple 20 minute crust, topped with mushrooms, peppers, onion, other veggies like zucchini, chopped garlic tossed in olive oil, and kalamata olives over a simple tomato sauce. Baked to perfection, then sprinkled with vegan parmesan (or use any of my other vegan cheese recipes for mozzarella, cheddar), fresh basil and red pepper flakes. Simple and amazing! The garlic tossed in olive oil cooks faster and does not taste raw. Use roasted garlic for variation. I generally chop the mushrooms and mix them with the garlic, add some oregano and thyme and fennel seeds to use it as veggie crumble. For gluten-free crusts, see here.
