When I visited Tuscano’s Pizza & Pasta in Yucaipa shortly after the Italian eatery opened, I must confess that I was underwhelmed. Everything was drowning in cheese, the pizza dough was limp and lacking crispness and the pasta was cooked well past al dente.

What a difference a year makes! They have really gotten their act together and the overall impression is one of a family run east coast Italian osteria that will bring back fond culinary memories if you grew up in the tri-state area of New York, New Jersey and eastern Pennsylvania.

At Tuscano’s, each order is accompanied by an order of toasted breadsticks with garlic butter and are excellent for dipping into any residual marinara sauce.

You can tell a lot about how authentically Italian a place is by the cold sub sandwiches. Here, the meats include salami, capicolla and, strangely enough, pepperoni — which, in my opinion, is better left on a pizza. But you can always substitute turkey.

It would be great if they offered mordatella or sopressata. The Italian dressing on the sub is quite good, and like any real east coaster, I had them soak the bread’s interior with it.

Another true test is the consistency of the meatball in a meatball sub. It should be soft and moist, mixed with seasoned bread crumbs, browned and then slowly finished in the marinara sauce to maintain juiciness during the cooking process. Each 8-inch sandwich contains four perfectly cooked meatballs. The roll also was toasted to help prevent the sauce from soaking through the bread.

You just don’t see strombolis very often. Usually, the calzone, a thick half moon filled bread dough, is more commonly found. Both are done at Tuscano’s.

The stromboli is thinner (more like a quarter moon) and not quite as stuffed as its calzone cousin. We opted for the Philly stromboli — all the ingredients found in a Philly cheesesteak — with the meat imported from Philadelphia, and upgraded in the form of ribeye, along with sauteed onions, mushrooms, green bell peppers and melted provolone and mozzarella. We opted for the personal size. Dip each piece into a large dish of the homemade marinara sauce before devouring.

WOODHAUS

Next came pasta. We chose the “make your own” option with fettuccine, chicken breast pieces and a creamy pesto. The portion was enormous and could easily feed two to three people. Accompanying this were two pieces of garlic bread which contained melted butter, but not much in the way of garlic flavor, probably because they used a sprinkling of garlic salt instead of their awesome garlic butter and parmesan cheese coating found on their breadsticks.

Our final dish was the personal size Margarita pizza with the addition of spicy Italian sausage to the buffalo mozzarella, tomatoes and basil — a Neapolitan classic. The crust was firm with a pleasing crunch. By all means, sprinkle some hot pepper flakes on your slice to complement this high quality pizza.

Not that you’re still hungry, but should you need some roughage, the “small” salad is enough to feed two, coming as a mound of diced tomatoes, shredded mozzarella, black olives and lettuce with Italian dressing, or another of your choice.

LUCIAN'S

You won’t leave hungry, but be sure to savor the flavors along the way of a place reminiscent of what you’d find on Philadelphia’s south side. Rocky Balboa would be impressed!
